On the Podium Pudding
This dessert provides key nutrition as bananas are known to boost energy and provide potassium and fructose. The light wholemeal bread contains a starch carbohydrate which is released into the body slowly, helping athletes to maintain their energy for longer periods of time. The small amount of sugar, coupled with dried fruits, provides extra energy, whilst the egg provides protein alongside the calcium from the milk and low fat natural yoghurt.
Recipe 2: (Serves 4)
Ingredients
4 slices wholemeal bread
3 tbsp. sultanas
1 large ripe banana sliced
1 tsp. of vanilla extract
200ml milk
1 tbsp. margarine
3 tbsp. currants
1 tbsp. Demerara sugar
1 egg
1 tsp. of ground cinnamon
Method:
1. Beat the egg and milk together with the vanilla extract
2. Cut the crusts off the bread and spread with margarine (cut into small pieces).Put half of the bread mixture in a 1 litre lightly greased baking dish
3. Cut the banana into slices and mix with the sultanas and currants
4. Spoon half of the banana and sultana mix over the bread
5. Pour half of the milk mixture over this, making sure to cover the bread
6. Layer with the remaining half of the bread mix, then remaining banana mix, pour the rest of the milk mix over – press down gently to soak the bread
7. Sprinkle the top with the sugar and cinnamon and bake in oven at 180C for about 30 minutes or until the top layer of banana pieces are caramelised. Serve warm with natural yoghurt
